1 – Rigatoni Italian Pasta (Rigatoni Spinach Pesto)

Ingredients :

  • Rigatoni Pasta – 100 gm
  • Spinach – 1 Bowl
  • Garlic – 3 Pcs
  • Parmesan Cheese – 3 tsp
  • Baby Spinach – 1 Cup
  • Egg plant – 1 Cup
  • Cherry tomato – 1 Cup
  • Olive oil – 20 ml
  • Salt – 1 tsp
  • Black pepper – ½ tsp

METHOD :

 

  1. Take a Sauce Pan, Boil pasta for a 7 – 8 mint.

 

FOR PESTO:

 

  1. Boil spinach for 10 Sec.
  2. Mix Spinach, Garlic, Olive oil and Parmesan cheese and Grind it in a Mixer Grinder.
  3. Take a Sauce Pan, put Olive oil and put cherry tomato for sautéing, add Rigatoni pasta then add pesto sauce and mix it properly.
  4. Add Baby Spinach and Eggplant and cook it for 3 mins.
  5. Garnish with Parmesan cheese.

 

 2 – Panner Cacciatore

 

Ingredients :

Paneer Dumpling

  • Paneer – 100 gm
  • Red and Yellow Bell pepper (Chopped) – ½ Cup
  • Carrot – 1 baby carrot
  • Beans – ½ cup (Chopped)
  • Salt – ½ tsp
  • Black Pepper – 1 tsp

 

For Batter

  • Flour – 50 gm
  • Corn Flour – 50 gm
  • Tomato ketchup – 2 tsp
  • Salt – ½ tsp
  • Black Pepper – ½ tsp
  • Red chili powder – 1 tsp
  • Water – 1 cup

 

For Sauce

  • Red and Yellow Bell pepper – ½ Cup
  • Carrot – 1 Baby carrot
  • Tomato puree – ½ Cup
  • Chopped Tomato – 1 pcs
  • Fresh Beans – ½ Cup
  • Spinach – 3 leaves (For Garnishing)
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Rose Merry – ½ tsp
  • All Seasoning – ½ Cup
  • Olive oil – 10 ml
  • Garlic – 1 tsp

 

Method :

For Paneer Dumpling

  1. In a bowl, mix paneer, salt, black pepper, green chili, chopped vegetables and mix it properly.
  2. Make a small ball and Cutting with flour batter.

 

For Sauce

  1. Wash all the Vegetables and Cut it in a medium cube.
  2. Take a pan add olive oil, chopped garlic, all vegetables and toss it, add tomato puree and cook it properly then add chopped tomato cook for 2 -3 mint.
  3. Add 2 cup of water then cooked it for 5 min then add salt, pepper, Red chili flakes and all seasoning.
  4. Take another Pan, add oil for deep fry and paneer dumpling.
  5. For Platting – Take 3 Spinach, then put 4 pieces of fried paneer dumpling and then topping with the sauce.
